GRIDDLECAKES

 

Griddle cakes are a great way to start out your day. But they also make a great snack any time. Toped with blue berries, strawberries wiped cream or sprinkled with powdered sugar. Or the old standby, lathered in melted butter and then dipped into maple syrup.

These are just a few of the things that you can do with griddle cakes. Other options include chocolate syrup, apple sauce with cinnamon, honey, molasses, and sour cream and don’t forget about the side dishes of bacon, sausage and eggs.

The following is my "Basic Griddlecake Recipe" Add subtract or substitute to suite your own taste.

Sift into mixing bowl
2 cup all-purpose or pastry flour
4 teaspoons baking powder
4 tablespoons sugar
1 teaspoon salt

Put in mixing bowl (with items above)
1 cup milk
4 tablespoons butter (melted) or you can substitute 4 tablespoons Canola Oil
2 eggs

Mix well by hand making sure that all the dry materials have blended. Mix will be very thick.

Cook at medium heat on griddle lightly greased with butter. Spoon batter on to griddle with serving soup spoon. Cook until top of pancake has bubbles showing and bottom is golden brown. Then turn the griddlecake and cook until golden brown.

Makes 10 - 14.

Recipe can be cut in half if lesser quantities are wanted but leftover griddle cakes can be frozen and then reheated in a toaster oven. I have often made up a whole batch just for freezing so I can have griddlecakes during the week with out having to "cook" them. It also makes a good after school snack for kids that is quick and easy to fix.
